Copalli Rum is crafted from only three ingredients: fresh-pressed sugar cane juice, from organic heirloom sugar cane sustainably grown at the Copal Tree Farm, rainwater courtesy of our semi-tropical climate, and yeast. To craft our Organic Barrel Rested Rum we distill the sugar cane juice in our column and pot stills. The distilled sugar cane juice is then rested in used American Oak bourbon barrels to create a rich, sweet rum, free of added flavors, colors or additives.
